About the Recipe
Ingredients
1/2 cup long grain rice, optionally washed
1/2 cup orzo
1/4 cup pine nuts
2 cloves garlic
1 cinnamon stick or ground cinnamon
Ground Turmeric
Ground Cumin
Garlic powder
Onion powder
Ground coriander
Black pepper
1 teaspoon salt
1 cup chicken stock or Bouillon equivalent
1 bay leaf
Olive oil or butter
Preparation
Heat a sauce pan over medium heat
Be sure to use a sauce that has a tight fitting lid.
Add olive oil to coat the bottom, and add the rice and orzo.
Cook the rice and orzo for about 3 minutes untl the orzo begins to toast. Be sure to stir frequently to avoid burning.
Add the pine nuts and toast for about 2 minutes.
Pine nuts can burn easily if not stirred often.
Add the garlic and spices, and cook for about 30 seconds until fragrant.
Add the stock, bay leaf, and salt.
Bring to a boil, then cover.
Cook on low for 15 minutes over a very low heat. Do not remove the lid.
Turn off the heat, but keep covered for an additional 10 minutes off the heat.
Fluff and serve.
